Getting to DXB first is not an option.
Getting to IST and then asking to rebook on another airline from IST (LH, for example) is an option, indeed.
An A321 on a 6am departure from DOH (instead of a lie-flat on a 2am departure), and then eurobiz onwards instead of a recliner (and that's the best case; worst case - overnight in IST) all sounds pretty ...... ) I would definitely prefer them to re-book me on QR
Do you think sales office agents would be willing/have more authority to do this than call center agents?
Is there a TK office in DOH?
Fun thing: the whole itinerary is still valid, even if the connection in IST is now 40min which is less than the MCT, and the call center agent has confirmed that i wouldn't be able to catch the connecting flight in IST.
Where is your final destination? This could be useful for determining possible solutions. For example, if you're transferring to Singapore, they may book you to the SQ flight as it's a TK codeshare. Or, if you're transferring to Warsaw, they may book you to the LO flight as it's a TK codeshare.

Also, I would like to ask that have you confirmed the changes via the Turkish Airlines website or via the call center. If you have confirmed the changes, this means that you are OK with the alternative that TK provides and no more change options would be provided. If you haven't confirmed, do not check-in online as you would automatically confirm the changes. However, if you are OK being rebooked to another airline from IST, keep the 40-minute transfer and after missing your connecting flight, due to IRROPS, you would be able to ask much more easily to rebooked on another airline to one of the transfer desk agents.

The sales offices are operated by Turkish Airlines and the call center ( English version ) is operated by a third party company somewhere in Latin America and Eastern Asia. Obviously, a TK agent would be more useful than a contracted call center agent.

The address of the Doha sales office is;
Turkish Airlines Inc. P.O. Box: 93 Airport Road Crowne Plaza-The Business Park Building-E 1st Floor, Doha QATAR
