Is this the result of a schedule change on an already ticketed itinerary? If this is the case, you have some leverage prior to accepting the changes.
I nticed that the original 767ER that flies to ORD at 1 pm still exists so I tried to change my ticket BACK to my original airplanes and the agent said it was impossible because it was sold out...yeah I didn't understand his reason, but should note that NO flights are anywhere near sold out.
A possibility here is that the flight on the 763 does not have inventory in your fare bucket, or if it is an award ticket, that there is no award inventory on the 1PM flight. I would look into this.
Another possibility is that you may have had an uncooperative agent. Hang up and call again...
Is there anyway to determine where the 767ER that flies to EZE originates that day as I thought it was LAX?

SeattlePilot said; but that would only work for routine operations, and the case for a specific date may be different (if there was a mechanical upline, etc.). At a UA hub as large as Chicago, that 763 could be coming from anywhere, even maintenance, and not necessarily be the LAX bird...
If what you want to know is whether the 1PM 763 to ORD is a 3-class, when you look at availability of your fare code, also look for business-class fares (C, D, Z).
