is there any benefit to having Global Entry without your Global Entry ID card when walking back from Tijuana to San Ysidro? I have GE and use it constantly at airports but I've never used it at a land border because there's usually no wait (e.g. Niagara Falls).

Unfortunately I don't travel with my GE card. I'm wondering if I can still use the "Sentri" lanes, show my passport and tell them I have GE and that gets me through quicker. I don't plan on crossing during a high traffic time but you never know at the border crossing.

You should plan to travel with your GE card if you want to use SENTRI lanes as a driver, passenger, or pedestrian. Using SENTRI or NEXUS lanes without having your card in your possession is a good way to lose your card.
