There is not a single, simple answer to your question about breakfast for Platinum Elite (and higher) guests. Please look at the Wiki at the top of this thread.

At some brands, daily breakfast for member + 1 is only an Elite Welcome Gift choice.

At some brands, daily breakfast has absolutely nothing to do with Elite Welcome Gift.

At some brands, it makes a difference whether the property is or is not a resort.

At some properties of some brands, you can pick whether you want restaurant breakfast as an Elite Welcome Gift or if you just want to visit the lounge for breakfast.

At some brands, there is no such thing as Elite breakfast.

And so on.

Yes, it's too complicated. Apparently, Marriott was unable to force hotel owners to accept an entirely new benefit structure. SPG legacy brands tend to offer similar breakfast benefits to the old SPG program, while Rewards legacy brands tend to offer similar breakfast benefits to the old Rewards program. Things are better than before at five brands of resorts and four select service brands.

It takes a little effort to figure out, but it's not incomprehensible.
