I think with most banks nothing would happen.

Amex however would almost certainly claw back the bonus, which would cause your balance to go negative. I haven't seen any DP of what happens if you try to cancel an Amex with a huge negative balance, but I wouldn't do that unless I never plan to get another Amex ever again.
