It used to be possible to book for future dates, but I haven't been able to do so with one that I have expiring in July.
I doubt extensions are possible, but you'd have to ask IHG.
You may be left with just using it somewhere nearby you for a one night stay and the welcome points upon check-in. You could even check in, go to the room, leave the key there and go home again if you prefer...
