Other carriers (Delta, Continental) show business flights for only 3k direct.
Why is AA so expensive and can anyone think of a way I can fly an AA or OW flight to AMS for around 3k? I can probably go a day earlier if needed.
Thanks!

I believe the restriction you mention on BA is between the US and the UK, not on all transatlantic flights. A way around would be connecting in YYZ and then crossing the pond with BA.
YYZ-AMS with BA in C, for 8/16 and 8/27 is $3.321 - the short hop NYC-YYZ is available in coach at $380 (AC, CO, UA) and $600 (AA) for 8/16 and 8/27.
Another option would be Aer Lingus, from JFK at $4.689
Anyway DL has a $2,600 from JFK-AMS for 8/16 and 8/27
Should you book under two PNRs have ample time for connections between carriers.
Considering BA C product is years ahead of DL, it could be worth the difference.
These fares were the ones I got at a glance. Other FTers might help you further.
