I tested the Southwest via Paypal wrapper, and as expected, it is consider to be online shopping for the purpose of this card. Online Stripe transactions are also okay. I have also been happy using this for food delivery and other various mobile app vendors. I do try to push to have Paypal handle the transaction which is really useful since I don't need the card or the card number. Even getting refunds via Paypal hasn't been an issue if I needed to have the merchant refund something.
Online transaction flag is a Y for all of these cases, and I only got the 1% if the transaction is in one of the excluded categories (even under Paypal) or if some reason the transaction was done as a manual entry CNP (Visa Checkout did this unfortunately) rather than a true online transaction.
Even though the category switching is more flexible than I expected, I think the online shopping category still works out better for me than other options. This card went from a low spend card (just gas when needed) to one of my more frequent cards. The first two Qs for fuel have been readily covered by Freedom and Discover (although, it doesn't help for my Costco fuel needs at the moment).
On Target in-store, most of the time it is a 1% category when it runs as a Discount Store. I haven't used my card at a SuperTarget where that was where it was most likely to be a 2% potential as a Supermarket. My target.com transactions were also okay for 3% online shopping.
