In fact, AS's partner network out of Australia is abysmal. The options are, go to the Americas, or take CX to HKG, where the award breaks (no stopover!) Australia - HKG - India is two awards.

I'll most likely end up burning 110k UA miles on two NH awards to make this happen.
You're overthinking this. Australia-HKG for 30k AS miles on CX, HKG-TYO(stop)-DEL 25k using JL J with AS miles (JL awards allow a stopover for this). That's 20 hours of flying in J for 55k miles.
