Remedies to a schedule irregularity are spelled out in Rule 80(C)(4) and include full refund or re-booking on another aircraft/re-routing that's acceptable to the passenger. If BRU was just a connection and you're as happy to go YYZ-FRA/MUC-xxx as you were YYZ-BRU-xxx, then maybe that's a good option.
Now, I've given you the letter of the law. What your chances are of getting Aeroplan to properly implement this, I'm not sure. I've never tried to re-route/refund for an equipment change, only for change of scheduled times, and I don't recall anyone ever posting here that they've used the strategy I've outlined above. But if you really dislike the look of the equipment you're booked on, it might be worth a call. I would have the tariff in front of me and be willing to cite it, and be firm with the agent (including asking for a supervisor) if they try to tell you something different.

I successfully did it on a paid UA ticket once (but I wanted the flight I switched to for other reasons), but I've never done it with AC.
I typically favor schedule over equipment.
