I don't recall rental cars in Aruba being notably expensive, and hopefully that would be the case for you as well since you're going at a non-peak time. You'd probably make up the cost in averted taxi fares pretty quickly, plus have a lot more flexibility.
Two restaurants worth leaving the Ritz-Carlton and surrounding hotels for are Flying Fishbone -- think sunset dinner on the beach -- and Quinta Del Carmen.
