The thing is that Ryanair doesn't have the planes or connections to rebook you.

Apples and oranges. You're not going to Eindhoven airport to get into Amsterdam, are you? LCCs can indeed serve smaller airports and that does fill a niche. Where BA doesn't have any alternative I do find myself using them, but if BA flew there, I would take BA over LCC.

Empty flights happen on every airline. Difference is as a frequent flyer BA will try to seat people in a way that would give me an empty seat next to me as a frequent flyer, unless the fight is completely full.

Depending on the weekend, yes, this happens. Although you're quoting Ryanair's lowest price vs a very average price for BA. Talking about AMS though, LGW-AMS is routinely sold around 60 quid, and you get at least 5 back as avios. So the difference isn't as big as you say it is.

Ryanair's service is superior to BA? I wouldn't go that far.
You missed the point in the last bit. Superior in the sense that Ryanair is an LCC- if you go on a ryanair flight, expecting LCC standards but pretty good LCC standards, then they excel. Going on BA, where you arent expecting LCC standards and expecting higher standards, then you will be sorely disappointed.
I would like you to find me a flight to AMS, on a friday morning, in the next three months, returning on a sunday for less than £70.
I travel for music. so my dates arent "flexible". I have fixed dates.
