Luckily there is only 40 miles or so difference between the two routes so assume the calculations weren’t far out for weight and fuel between the dispatcher’s view and the pilot’s view but you have to wonder about these things......
If there was a flight plan for LCY-EDI (which it sounds like there was) then the fuel and weight calculations should have been correct for that route which is what they flew.
