The resort credits seem to take a lot longer, so they already know you only spent $200, and will still have to spend $50 more at another resort somewhere.
Getting an Amex credit doesn't mean you didn't spend $250 at a resort. You get points on the $250 you spent and I would expect the credit as well. In any event triggering the resort credit doesn't require spending $250, you are credited for all resort spending up to $250 so in any event you will receive at least a $250 credit.
