I booked F LHR Hong Kong and back PVG LHR - there is tonnes of availability. I then bought a qantas ticket in Y Hong Kong Sydney Shanghai for about £300. It’s a 2-4-2 a330 so grabbed bullhead seats for the 2 of us.

This route has lots of availability, but the leg from China to Sydney are a good bit further than from Singapore to Sydney for example.
