Hi fuzz,
Looks like an exciting trip ( alothough it will probably be starting to get warmer and more humid).
You would need an early start from Hong Kong for a 7am flight but I think HK Express has in town check in the day before ( but not sure if you need to travel on the Airport express train which does not start running until about 550am. ( A taxi would be about HK$300 from Kowloon IIRC)
