I don't fly SQ as much as I did in the past but very early in the flight (quite possibly on the ground), a cabin crew will walk around confirming your meal.
To avoid eating beef, I always ask for a non-Hindu vegetarian meal when travelling economy (I am not Indian). A cabin crew comes up to me and confirms my name and my meal.
After it is confirmed, the crew will put a sticker on my chair with something written on that I'm guessing translates as Hindu Non-Veg Meal (or trouble maker for ordering special meal).
My point is that the crew will often use this sticker as a reference point when deciding how to address their service, so it maybe that someone had placed this on your seat.

Personally, I don't think I would be so worried about this. If you want to talk about racial profiling, imagine you were in 'merica and had to go through "random" security screenings ... If you aren't white ... wooohoooo .... prepare for a pat down .... every ... single ... time!!! TEAM AMERICA ... F*** YEAH!!!!!!!!!!!!!!!!!!!!!!!!!
For years I was based in DCA, with the 30 minute rule and doing weekly round trips to ORD on UAX ... Well aware, but thank you for assuming other wise!
