Be careful what you wish for. What you are seeing, for example with degraded catering and eagerness to pursue excess baggage fees is a direct result of intense competition from start up low cost carriers, and long haul from the rise and rise of Middle Eastern and Chinese air carriers. Lots of disruption there, and whilst airfares (in real terms) have never really been lower, service has also (arguably) deteriorated.
It is difficult to apply Airbnb type models to the airline industry because they rely entirely on assets owned by (and labour) provided by individuals. You own a house, that you aren't using? Fine we'll take a cut and rent it to someone else for you. Uber - is somewhat similar in many cases as well (not withstanding the leasing of cars to drivers in certain countries) - you own/rent a car and have some spare time, OK we'll rent that car out for you and take a cut - you do the driving. Not too many individuals own jet airliners.
By the way, you should stick around in Flyertalk, you might learn something that will maximise your experience when you do travel. It can be a bit hostile at times, particularly to new participants (there is a tendency for them to post once, and never be heard from again, hence the hostility - but you've come back to answer your critics so kudos to you. I never let someone who I don't know, and doesn't know me, typing words into a screen, insult or bother me. Such is life.
