It's been my experience that breakfast at HGI can vary a lot based on who's manning the stove. Some are just the standard bacon/sausage, scrambled egg product, and potatoes, but others get fancy. I stayed at one in Wilkes-Barre, PA quite a bit. For a while, they had two chefs who alternated breakfast. Chef A's offerings would reflect the minimum required by HGI standards, while Chef B would always have at least one special offering, including eggs benedict with house-made hollandaise!
