Most of the M* sushi spots will open up res on the first of the month one month prior, for example if you want a res for Mar 15th, the res would be released on Feb 1. But you should always check the restaurant's website to confirm. General rule of thumb for a popular spot would be 1.5-2 months ahead I'd say.
