I have a flight that goes Nagoya(domestic JAL) - Tokyo(Air Canada) - Vancouver. All of this in economy.

1) Would it be 1 luggage at Nagoya (because this counts as a domestic flight) and then 3 luggages when I transfer in Tokyo with Air Canada?

2) Would I have 2 luggages at Nagoya (because the full itinerary is an International flight)?

I would assume I won't get any "priority checkin" because I will be checking-in at a JAL (OneWorld) Alliance desk. Will I be able to request priority labels on luggage because the International leg is Air Canada and I have status on Star Alliance?
You will follow JAL’s baggage rules. I have had these types for flight segments myself a few time out of China, connecting onto AC flights. If the agent brings up baggage charges, nicely inform the agent about your gold status and they may wave the baggage charge. I’m batting around 60% on this method, mostly with CX.
