Not sure what the official policy is, but some flight attendants do follow FEBO on drink-only flights.

Some of the newer flight attendants take drink orders before departure so they can serve more quickly. If you're in row 4 of first-class it can be 20 minutes before you get a drink, which on a 1-hour flight is a long time.

Yeah, it's always bothered me that the champagne is never on the beverage cart on DL (I've always assumed they keep it on ice in the galley, but maybe there are more nefarious reasons...). I'm not sure how you go about asking them to pour it in front of you without coming across as a DYKWIA! The FA serving the aisle usually calls to the galley FA to bring it out.
Depends. Some of the pursers and flight attendants actually present the bottle and pour it in front of you, whether it's the bottles on the cart or in the galley. Others just pour on the cart and handle you the glass, so you don't really know what you get.

I will have to go back through my menus, but I believe Charles Heidsieck is still served. I've had it within the last year.
