Not sure what gave you the idea that it'll be "bad" - bad service as in rude/lazy cabin crew or just noise from the galley?
It's an Asian airline, not the US3.
In my experience, SQ is one of the best airlines to travel in in Y.
As for meals, not sure what you meant by "choosing beforehand" unless you pre order a SPML
Meal service will usually start from the front to back after dep., then from back to front before arrival.
So if you don't get your 1st meal choice, the cabin crew will make an effort to make sure you do for the 2nd meal - I've experienced this several times though it was for other pax, not me as I always order a SPML.
