I did get to Himeji, Hiroshima and Miyajima last time. I did a day trip from Kyoto, and did Hiroshima and Miyajima in the same day. Caught the last ferry and train back. Very long day but extremely awesome. Definitely a great experience.
Ah, I missed the Hiroshima/Miyajima in the OP. But I think the ‘in-between’ destinations (Shikoku, inland sea, Okayama) are interesting to see as well. You could also go up to kinosaki-onsen or Amanohashidate for a long day trip or an overnight stay, there are direct trains from Kyoto.
I also like the suggestion to go to Kyushu. It’s a great place, a bit less popular but very relaxing and fun.
