The reality is that with proper planning and advance searching, you can get to most good starting points -- London, Amsterdam, Brussels, Frankfurt, Munich, Zurich, Paris, Madrid, Barcelona, Lisbon, Rome, Prague --- for fairly similar prices, and yes there are deals out there and you might find one city a lot less than another -- but really the question you should ask yourself is where do you want to go and what is the most efficient place for you to start and end your Eurail trip? Also, you should plan for either an open-jaw trip (into one city and out of another) to maximize your time or to use some low cost European carriers for flights around Europe to let you cover more ground and/or not have to get all the way from, say, Italy or Greece back up to Amsterdam just to fly home.
