My favorite way to get up (or down) is by bus as it winds the scenic twisting roads, not the tram. I'm not sure if buses are available between midnight and 7 AM but it's worth looking into. The tram, though direct, just isn't as exciting.

Doesn't look like the bus runs much after midnight, though. From their Web site (for Bus 15):
Central Pier 5 to The Peak
Daily: 10:15am to 12:15am
(from Man Kwong Street outside Central (Pier 5))
Daily: 9:10 am to 1:00 am (from The Peak)
