The Jaguar / SUV may be offered but it's definitely not something you can count on and it's more likely to be on a domestic arrival anyway, where there is a greater time benefit by avoiding the security screen. From AMS that's not avoidable so generally the Jag can't save much time. I've had it for trips with long connections and not had it offered on trips bang on 90 minutes. You just can't predict it.
I'm going to guess your previous experience was late morning when the main AA departures are leaving? Not that I've really had experienced any problems recently, all of my transfers in 2018 have been in the 19 to 37 minute area, T5 gate to T3 lounge. At that time of the day (20:00 hrs) I really doubt you'd experience "utter chaos". If your AMS arrives into T5B note the bus pickup point at ground level.
