Yes tender steak isn't guaranteed but the taste is. The waiter's comment doesn't surprise me as all Argentines I know, including my wife, do not like their meat rare and neither do I. The longer it spends on the grill the better it's going to taste.
Taste is not guaranteed, unless you're strictly talking about the carcinogen crust. And no matter what of feed your cow has had before its demise, the most tender cuts are generally not the most flavo(u)rful. Why do you think that Fillay Minyown is commonly served wrapped in bacon (at least in the USA)? Not because of its inherent flavo(u)r.
The longer it spends on the grill, the more likely you're also going to get some breakfast included with your dinner, because if you don't floss before bed, there will be meat left over in your teeth when you wake up.
