What is the definition of a stay?

My wife handles all things Hilton so I really am not knowledgeable about the system although I stay often. I need 6 stays by end of year to renew diamond (supposedly till 2021 she tells me? How can that be?). And going to try and have fun too.

In the UK I see plenty of cheap and seemingly even nice places in the remarkable £60-£80 range over the next two weeks until before Xmas. So is a stay a simple check in and out? I would assume, you cannot cut up a multiple day stay into mini stays same hotel. Can I stay in hotel A night 1, B night 2 and back to A for night 3? (for 3 stays). Can you check into two separate hotels same night? (I have done that before for real reasons. e.g. midnight flight westward so checked out 10pm, landed 5AM at destination where I technically booked from evening before and wanted a guaranteed room early morning)

Do you have to physically be at a hotel as we check in via app? (not planning to do that, as actually want to hotel hop with wife, for the fun, But.... year end is soon)
