The simple fact is that fortunately, you were not harmed. What "could have happened" is speculative. If someone ran a red light while driving and almost hit your car, and scared you, you may have had a quick panic, but you were not injured. If the boarding carpet at the airport gate was curled up at the end and you could have tripped over it, but you didn't, you were not injured.
This was most likely a case of negligence by someone in the catering kitchen who had a pin become dislodged from a hair net, or similar, and nobody noticed. If pins in the food are a repeated occurrence and LATAM does nothing about it, like firing the caterer, kitchen inspections,etc., then you've got a different story.
If you had been hurt by it, you'd also have a different story. The last element of a personal injury claim is damages. While I can't speak for the jurisdiction of the law applicable to your horrible incident which could have killed you, your damages were nothing more than a moment of shock, plus all of the self-inflicted pain and suffering for not receiving what you consider to be an adequate reply. Sorry to sound so harsh, but count your blessings that you weren't injured rather than counting your unblessings for not getting enough compensation for not being injured.
