Armando al Pantheon
Roscioli
Cucina e Cantina

The first two require reservations, the last one is more casual but still good
Grand Hotel de la Minerve has great views over the Pantheon and back to the Capitoline. And i agree about Armando being a very good spot in an area not known for great restaurants
