No steakhouse visits in BA this trip, but I ordered several steaks in fine restaurants in Patagonia. Most of them weren't particularly good. It used to be that even an average parrilla would serve you an excellent steak, but those days are long gone. If you want to attempt to capture any of the old magic, I think you need to go to about the best steakhouse -- and hope for the best. In all of Patagonia, I think I had only one "great" steak dinner, at La Tapera in El Chalten. And even there the meat flavor was helped by a Malbec wine reduction sauce.
There also seems to be more tendency to overcook the meat -- even if you ask for it medium rare. Somebody told me I should put a picture of a sliced open steak on my phone to show the waiter how I want the steak cooked. I think I'll try that next time.
It doesn't work just saying "rojo"? I've had the best of luck just saying that in Latin countries
