I generally will not book a connection from MSP thru AMS with less than 1h15m connection. I've had three out of 6 longhauls out of MSP have catering delays while the plane is at the gate in the past 24 months, and there isn't much time padding IMO on those flights. Polderbaan can be the clincher for a missed connection or at least a sweaty time of trying to get thru passport (even with the short connection' option).
I opted for a 3+ hour layover when heading to BUD last spring rather than 55 minutes, by taking an earlier TATL. The schengen KL lounge, while not fancy at all, is serviceable.
