Even on the Strip, most of the good restaurants and buffets are not at all 24-hour operations. There are some late-night exceptions (Wolfgang Puck at MGM), but mostly they want you back out gambling, or so the tired-out thinking goes.

Red Rock is a very nice property just a 10-minute drive from Red Rock Canyon (not surprisingly...), and there's plenty of off-property restaurants in that area with late-night options. Same for Green Valley Ranch in Henderson. M Resort is nice enough, and right off I-15, but not much else is near it.
