75mins will be plenty of time assuming an on time arrival ( or even a small delay)
The Cathay moving map will give the arrival gate and the connecting gate information. After leaving the aircraft follow signs to "Transit" and if the first transit point is busy head to the next one which will likely be quieter. After that I would probably go to the lounge closest to the PVG flight gate (after checking for any last minute gate changes). Being in business you will be off the aircraft quickly.
As to seats I prefer a view so would move forward of the wing. I have been beside a bassinet seat once and the infant was well behaved.
