Because of distances between the cities, if you have 2-3 weeks or less your best bet will be flying between the cities as you are looking at about 12-14 hours between Brisbane and Sydney and similar between Sydney and Melbourne, but if you have time to spare if you just want to relax it is best to look at the rail passes on offer for overseas visitors.
As for New Zealand probably need at least acouple of weeks depending on what you want to do
