By the way, I had actually booked UA (to get 1K status), but then came to my senses...
There is a thread on the first or the second page about this with some good replies.

Based on my about 12-15 flights so far on CX, and a few in J, I will say that vegetarian options are not always good to come by unless you select a special meal. I personally like Indian food, and have found Indian vegetarian option working quite well for me so far. (Even though I do eat meat, I prefer this option on CX.) It has significantly better than the food on UA I have ever had. I was given a panini sandwich in a plastic wrapper on my UA flight from Geneva to EWR. That definitely has been worst so far for me.
