Are breakfast benefits determined based on status at booking or at the time of the stay? I'm currently Marriott Platinum due to the United Reward Plus match, but believe I'll be reduced to Marriott Gold scum on Feb. 1st. My stay isn't until July.

You officially will be only Gold by the time of your stay in July. However, I recommend contacting the StR Bora Bora and asking if they might extend you Platinum benefits since you are now and were when you originally booked. They may very well be willing to extend that in this case. It never hurts to ask!
