Not sure how you are doing this comparison. If you are comparing a transfer of UR to Hyatt and then a Hyatt redemption via WOH to the use of AMEX MR points to book via the AMEX portal then naturally UR is a much better deal. If you however compare transferring AMEX points to one of their hotel partners then you can get over 1cpp. This is a classic case of YMMV depending on where and when you need a hotel. Hyatt's footprint is not that large so if you want a reward stay you might be more limited via Hyatt. AMEX also runs promotions that might change the calculation. Right now 1000 AMEX MR points = 3000 HH points.
Some people also don't know that there is a way to get an award redemption at hotels that belong to the Preferred Hotels & Resorts brand via transfers to Choice hotels which is an AMEX MR transfer partner. I would also recommend you do some research on this and see if there might be some hotels that work for you.
