Does anyone know whether this transit will require going through customs and immigration at PVG? My transfer is just a little over 2 hours so hoping I would make it. The 2 segments are on a single ticket.

You should be OK. Delta and China Air use the same terminal.
I just did this last week. I did notice that the trek thru the airside of the terminal is a bit weird, in that you will think you have entered the wrong corridor, like a utility corridor, a number of times.
There are signs though and I just walked slowly to make sure others were following.
All in all, it was quick, less than 10 minutes and there were signs to "mind the columns" which seemed to mean, do not walk into the columns holding up the ceiling.
You will walk thru a temperature sensor to check you body temperature (it measures the temperature of your head). It looks like you are going thru immigration, but it's just that and you'll bypass immigration,
