Qantas now do not fly to Dubai. The flights that went SYD/MEL-DXB-LHR now are SYD-SIN-LHR & MEL-PER-LHR
The crazy fees you are seeing will be BA surcharges, which cannot be avoided by flying another airline, when using BA avios.
