My experience has been that my flights coming from the east tend to approach south of the strip and then land to the north. Hence your best bet for long viewing is a window seat on the right hand side of the airplane (usually an F seat in the 3 by 3 arrangement). The caveat is that the viewing of the Grand Canyon is often on the opposite side. As always, ymmv.
