Whereas this is not a complicated omelette - I would add saltt just before eating, and butter tends to give a burnished colour and taste to omelettes - I am pleased to report that Mo is on standby on Sunday morning to ensure everything is performed to specification. Mushrooms are also available if required. Short of providing the eggs there isn't a lot more I can do, but I trust the omelette holding episode passes without incident.
