FWIW, getting Chinese visas probably wouldn't be too difficult for us, given our close proximity to SF. However, our passports expire at the end of 2019, and ideally we'd apply for 10 year visas after the new passports are issued, so as to get more use from them.

This itinerary qualifies for TWOV. The key to success is to give yourself plenty of time (an extra 60-120 minutes) in LAX to allow time for an expert agent to help you check in. You hopefully won't need the extra time, but if you allow for the possibility of a temporary issue at check in, you'll have a more relaxing experience.
