So yes, you will be able to leave the vehicle there after hour - most likely by parking in the parking lot and then dropping the keys in a drop-box at the Hertz counter.
You will most likely be charged until they open the next morning, which will mean your 1 day rental will become a 2 day rental, although some locations (but not many!) will base it on the actual return time.
If you're gold and you decided to do this, I'd suggest asking for a full copy of the rental contract when you leave the airport, not just the 3-page version they normally give out now days. The short version doesn't include the return form, which you'll want if you end up returning after hours, and is useful even if returning during opening hours.
