The only aircraft I notice a difference in handling in, other than the MDs with rear mounted engines, is the 739. It really chews up a lot of runway on takeoff. Brake chatter and vibrations can be a bit more noticeable on older a/c. Some of the 739s are becoming old enough that you have some vibrations on takeoff. Boeing a/c seem to be a little more inconsistent in temp controls, and this can be worse on the 757 with more emergency exits (it can be quite chilly sitting near them). As a pax, most often the most noticeable differences are the interiors.
