I've done exactly this before, including the CitizenM. If repeating it, I would be tempted to not do the overnight stop as the EDI-AMS flight is the first flight of the day for an EDI based plane so a good bet for not being too late.
On the return, I had a long same day transit and put luggage in a locker, went through security, enjoyed (?) the lounge then went back out once check in opened to check my bag in (something convoluted like that anyway).
