Absolutely .... Australia's border control systems are very advanced, and that nice little summons sitting there on the NSW Police computer system will be picked up when you re-enter. You could then either be refused entry, or simply sent to prison for failure to pay the fine

Definitely do something about it if you intend returning to Australia.
The police have to send you a copy of the photo by law - this should indicate whether or not you were in fact the offending driver.
