There should be handcuffs in the cockpit available for use in situations like this. Passengers can hold him down, handcuff him, and leave him on the floor (it won't kill you to lay on the floor during landing) until the cops arrive to physically pick him up and carry him away.

There are flex cuffs in strategic locations in the cabin. Plenty good for single use restraints.
Hopefully the guy will be banned for life by WN on top of whatever else befalls him.
