Depending on what flight you would depart on from AMS, going the night before might be advisable at the time of year when using separate tickets. If you were going to consider this, you would obviously have to leave a decent buffer too for your return to LON.
I’ve stayed at the CitizenM at AMS. It’s a short walk from/to the terminal. Get up the next morning, breakfast, get yourself ready at a leisurely pace and back to the terminal for check in and lounge time before your EK flight (if choosing the 14:30 departure).
Given ens the weather risks at that time of the year, I would have to very carefully consider when I would go to AMS if getting the evening flight. It may still be worth going the night before and seeing about a day rate for the day of departure.
